Parian Dishes

Some beloved Parian dishes include: chickpeas baked in the oven in a clay pot, kakavia (fish soup), gouna (sun-dried salted fish), salatouri (ray salad with a lemon oil sauce and fresh herbs), zucchini balls and tomato balls, fresh green beans, combining fava (bean paste), karavoles (giant snails) and kalfa (boiled greens) with skordalia (garlic sauce), dolmadakia (stuffed grape leaves) with fresh green beans, snails in tomato sauce or with myrmitzeli (handmade pasta), cod fish with spinach, rabbit stew and many, many more.

Mushrooms are also a favorite. Parians love sharing them with their friends, but the keep the place they picked them a closely guarded secret. Mushrooms, considered the poor man's meat, are eaten fried or grilled, and always drizzled with lemon.

Paros boasts the largest fishing fleet in the Cyclades, and catches include: slender rockfish and weevers, squid, cuttlefish, lobster, picarel, octopus, bonito, tuna, bogue, white seabream, common seabream, red mullet and common pandora.
